GAIA opened in 2018 at Gate Village No. 4 in the DIFC, founded by Evgeny Kuzin and Chef Izu Ani, who also leads Carine at Emirates Golf Club. In eight years the restaurant has grown from a single Dubai concept into one of the most widely distributed luxury dining brands to emerge from the Gulf, with locations in London, Monaco, Marbella, Mykonos, and forthcoming openings in Miami, Abu Dhabi, and Bahrain in 2026. The Dubai flagship holds recognition in the Michelin Guide Dubai, ranks No. 33 in Middle East & North Africa's 50 Best Restaurants 2026 and No. 25 in 2025, and appears in the World's 50 Best Discovery list. The kitchen is led by Chef Izu Ani alongside long-standing Greek chef de cuisine Orestis Kotefas. A sister concept, NYX, operates as an intimate late-night bar and dining extension within the same space.

The dining room is designed around a contemporary taverna aesthetic with a predominantly white palette, marble detailing, stone tiling, and black-and-white photography on the walls. The focal point of the ground floor is the ice market, a display counter where seasonal fresh seafood is presented for guests to hand-pick and have prepared to order. A Chef's Table offers a more intimate format within the kitchen. The terrace provides outdoor seating with views over DIFC. The crowd consistently draws from Dubai's high-profile international circuit, with sheikhs and global figures among returning regulars according to the World's 50 Best Discovery listing. Reservations are essential well in advance, particularly for weekend evenings.

The menu centres on Greek and Mediterranean ingredients with super-fresh seafood as the primary focus. The ice market allows guests to select their preferred fish or shellfish directly and specify their preferred preparation. Signature dishes include caviar toast, baked feta cheese, fried calamari, fresh truffle pasta, and a rotating selection based on daily market availability. The wine list covers Greek and international labels. Service is formal and attentive, with waiters guiding guests through the ice market selection as a central part of the dining experience. The Chef's Table format accommodates smaller groups seeking a more immersive kitchen-adjacent setting.
