Los Fuegos by Francis Mallmann operates inside the Faena Hotel at 3201 Collins Avenue, running breakfast, lunch, and dinner daily. Chef Francis Mallmann, known internationally for his approach to open-flame asado, developed the menu around meats, fish, and seasonal vegetables cooked over direct fire with Argentine gaucho technique. The dining room was designed by Baz Luhrmann, director of Moulin Rouge, and reflects the theatrical register of the Faena Hotel itself: leopard-print booths, red cushioned seating, gold detailing on the bar and throughout the space. Indoor dining connects to an outdoor area adjacent to the hotel pool. The bar at the end of the room operates with live music and cabaret-style entertainment on select evenings, drawing a crowd independent of the restaurant service. The overall atmosphere is high-energy and designed to be seen.
The kitchen works exclusively with live fire. Signature preparations include beets buried under coals for eight hours, finished with pistachio yogurt and garlic chips, Australian filet grilled and finished with breadcrumbs, skirt steak, ribeye, lamb chops, chorizo, domino potatoes, and whole seabass. The house-baked focaccia is a recurring highlight across all services. Every Sunday from 12:00 to 4:00 PM, the Sunday Fire Dome Asado runs as a family-style parrillada with a curated selection of skirt steak, ribeye, lamb, chorizo, and sides. The wine list has received multiple award recognitions and is structured around South American and international labels.
