NÜ has been operating in Tulum's Hotel Zone since 2018, positioned within the SoTu complex on Carretera Boca Paila. The name derives from the French word "nous," reflecting the restaurant's collective kitchen model, where multiple chefs contribute their vision to a single evolving menu. The kitchen works in partnership with Mestiza de Indias, a regenerative farm in the Yucatan Peninsula that applies ancestral Mayan agricultural techniques alongside modern practices. The menu is entirely seasonal and changes based on what the farm and local fishermen provide. Recognized by the Michelin Guide and listed among the top five restaurants in the Riviera Maya by Travel + Leisure.
The restaurant is fully open-air, set within a jungle garden lit exclusively by candlelight. A lounge area with a cocktail bar precedes the dining space, designed for guests to settle in with a drink before being seated. The atmosphere is quiet and composed, with subtle lounge music running through the evening. The setting is consistently described as one of the most intimate and romantically calibrated dining environments in Tulum.
The menu covers contemporary Mexican cuisine with a strong sustainability framework.
