Spilia has operated on Agia Anna Beach for over thirty years, with the name taken from the Greek word for cave, referencing the natural rock formation on which the restaurant is built above the waterline. The kitchen focuses entirely on fresh Aegean seafood sourced daily from local fishermen along the southwest coast, with the menu changing twice daily to reflect the catch. Oysters, mussels, sea urchins, crayfish, lobsters, and fresh fish are held alive in a natural sea pool within the restaurant and prepared to order in front of guests. The location sits in the cove between Paraga and Kalafatis, removed from the main beach circuits on the southern coast. Service runs daily from 2:00 PM to 11:30 PM.

The physical setting is among the most distinctive on the island. The restaurant platform extends over the sea on natural rock, with the structure partially integrated into the cave formation beneath it. Tables are positioned to face the open Aegean, with the sound of water against the rocks present throughout the meal. Candles and discreet lighting define the evening configuration. The crowd covers couples, groups, and special occasion dinners, drawn specifically to the location and the live seafood format. The calm cove provides sheltered water access directly from the restaurant.

The menu is structured around what the fishermen deliver each morning and afternoon, with no fixed program beyond the categories of fresh seafood and Greek Mediterranean preparations.
