Sublimotion opened in 2014 inside the Hard Rock Hotel Ibiza at Playa d'en Bossa and has since held the position of the most expensive restaurant in the world, with a price of €1,500 per person. The concept was created by two Michelin-starred chef Paco Roncero and creative director Eduardo Gonzales of Vega Factory. Each session admits a maximum of 12 diners around a single table, within a purpose-built room equipped with 360-degree projection screens, state-of-the-art audiovisual technology, and a team of 25 chefs, designers, technicians, and performers. The experience runs approximately two and a half hours and operates seasonally from July through September.

The dining room functions as a stage. Every surface, including the walls, ceiling, and table itself, serves as a projection canvas. Each course is accompanied by a distinct sensory environment, from virtual reality sequences to live choreography, shifting lighting, and custom sound design. The format has evolved across successive seasons, with each edition introducing new scenes and technological elements. The result is a production where the boundary between dining and performance is deliberately removed. Two sessions run per evening, with a maximum of 12 guests per session.

The menu covers approximately 20 courses of haute cuisine, built around premium ingredients including caviar and edible gold, prepared by a kitchen team sourced from Michelin-starred restaurants. The culinary direction follows the same research-led approach as Paco Roncero's Madrid restaurant. Each course is designed in direct connection with the sensory experience that surrounds it, with flavour, texture, and presentation calibrated to the audiovisual context of that moment. The beverage program is fully integrated into the experience, with premium pairings across the full session.
