SUSHISAMBA Dubai opened in 2022 on the 51st floor of The Palm Tower at the St Regis Hotel, Palm Jumeirah, as part of the global SUSHISAMBA network with locations in London, Las Vegas, Edinburgh, Singapore, Doha, and Abu Dhabi. The venue spans 12,000 square feet across a tiered floorplan, with 360-degree panoramic views covering the Palm Jumeirah coastline, the Arabian Gulf, Ain Dubai, and the Dubai skyline at 230 metres above ground. The interior was designed by New York studio ICRAVE, featuring a 3D-printed ceiling installation inspired by Japanese and Brazilian weaving traditions, vivacious greenery, and warm lighting. At the heart of the dining room sits a theatre-style open kitchen with a robata grill and sushi bar. The restaurant holds recognition in the World's 50 Best Discovery list, the Tripadvisor Travellers' Choice Award 2025, and the Star Wine List White Star.
The atmosphere is deliberately high-energy and theatrical, combining panoramic views with DJ programming, disco balls, and a service format designed around spectacle and sharing. On Thursdays, the dining room transforms into a dancefloor with live music and samba performances as a distinct weekly format separate from the regular dinner service. The open kitchen adds a performance layer to the standard dining experience, with chefs visible behind the robata grill throughout service. The World's 50 Best describes the venue as a "carnival of diners, drinkers, dancers, DJs and disco balls." The crowd is international and consistently well-dressed, with both hotel guests and the broader Dubai social circuit represented across any given evening.
The menu maps a culinary journey from Japan through Peru to Brazil across small plates, raw preparations, robata grill, and clay pots. Standouts include lamb chops with Peruvian aji panca and sesame, sea bream ceviche with green chilli and panca oil, crispy tofu taquitos in spicy ginger soy, salmon ceviche with passionfruit and aji amarillo, charcoal-grilled short ribs in chimichurri, and the Samba Maki rolls. The robata grill is the kitchen's centrepiece, producing brilliantly roasted meats, fish, and vegetables throughout service. The cocktail program draws from the Zodiac and Brazilian carnival traditions. The wine list holds a Star Wine List White Star recognition. A AED 250 per person cancellation fee applies within 24 hours of reservation.
