COYA Dubai operates within the Restaurant Village at the Four Seasons Resort on Jumeirah Beach Road, as part of the global COYA network with locations in London, Mykonos, Ibiza, Monte Carlo, Marbella, Doha, Riyadh, and Marrakech. The venue combines contemporary Peruvian cuisine with a multi-format layout covering three open kitchen stations, a Pisco Bar and lounge, terrace seating with beachfront views, and COYA Club, an intimate late-night concept that launches on select evenings after dinner service. The kitchen operates across a Ceviche Bar, La Parrilla charcoal grill, and the central Cocina Central, each preparing distinct elements of the Peruvian menu. COYA Dubai holds the Tripadvisor Travellers' Choice Award 2025 and appears in the World's 50 Best Discovery list.

The interior combines bright colours, tropical greenery, and cultural references to Incan heritage in a setting that is deliberately energetic rather than composed. The music program is central to the COYA identity, running live performances alongside resident DJ sets throughout dinner service and escalating after midnight on COYA Club nights. The Pisco Bar draws inspiration from the oldest bars in Lima, specialising in house-infused pisco preparations, specialty tequilas, and rums. The terrace provides an alternative setting with direct beachfront views. The crowd is international and well-travelled, drawn by the combination of food quality, music programming, and the broader COYA lifestyle identity.

The menu covers contemporary Peruvian cuisine with Japanese influence across ceviches, tiraditos, anticuchos, and grilled preparations from La Parrilla. Signature dishes include Miso Chilean Seabass Cazuela, Wagyu Beef Tartare, Sea Bream Ceviche, and Spicy Steak. The Friday brunch runs from 12:30 to 16:00 h with live music and a curated Peruvian menu across three beverage packages. The Saturday brunch runs from 12:30 to 15:30 h. A business set lunch menu is available Monday to Friday at AED 140 per person. The Pisco Bar cocktail program covers pisco sours, signature infusions, and a full spirits list curated around South American references.
