Koursaros has operated in Mykonos Town for over twenty years, originally established in the northern suburbs of Athens before bringing its fish and sushi fusion concept to the Chora. The restaurant sits in a spacious garden courtyard on Meletopoulou street, set back from the main tourist flow and close to Little Venice. The kitchen runs under the direction of Executive Chef Panagiotis Giakalis, who handles modern Greek gastronomy, alongside a specialist Japanese chef responsible for the sushi program. The daily catch moves directly from the fisherman's boat to the kitchen, with no intermediate stops, defining the sourcing philosophy of the house.
