Carbone Dubai opened in October 2025 at Atlantis The Royal on Palm Jumeirah, as the tenth global outpost of Major Food Group's Italian-American concept founded by Mario Carbone, Jeff Zalaznick, and Rich Torrisi in Manhattan in 2013. Described by Vanity Fair as "the most celebrity-studded restaurant on earth," the brand has hosted Rihanna, Kim Kardashian, Drake, and Justin Bieber at its New York flagship, and launched in Dubai with a star-studded evening featuring Alessandra Ambrosio, Rio Ferdinand, and NBA MVP Joel Embiid. The Dubai venue occupies the ground floor of Atlantis The Royal, ranked among the Top 10 in the World's 50 Best Hotels, and is designed by Ken Fulk in collaboration with Bishop Design, creating an interior that references mid-century New York glamour while scaling it to the proportions and ambitions of Dubai.
The dining room is dressed in velvet jewel-tone nooks, damask-upholstered walls, Venetian glass mirrors, a curated fine art collection, and one of the largest jellyfish tanks in the world stretching across an entire wall. Service captains in burgundy tuxedos designed by Zac Posen manage tableside preparations as a standard part of the service format. The outdoor terrace offers direct views of the Skyblaze Fountain Show on Palm Jumeirah. A semi-private dining room accommodating up to 40 guests is available for group reservations. Reservations are essential at least six weeks in advance for preferred seating times during peak periods.
The menu pays homage to mid-century New York Italian-American cooking, elevated through Major Food Group's culinary precision. Signature dishes include the Spicy Rigatoni, Caesar alla ZZ prepared tableside, Veal Chop Parmesan, Chicken Scarpariello, Linguini Vongole, and Tortellini Tartufo Nero. The wine list covers over 450 labels, including rare vintages, boutique producers, and Dubai firsts across Italian and international selections. The service format is theatrical and structured, with charismatic captains guiding guests through the menu and executing tableside preparations as part of the overall experience.
